Wedding Cake Tips from a Baking Buff

Jennifer Bunce of The Hudson Cakery discusses the wedding cake tips and trends for every bride-to-be

By Sarah Emily Gilbert

The days of white multi-tiered wedding cakes and plastic toppers are over thanks to confectionary connoisseurs like Jennifer Bunce. As head pastry chef and owner of the boutique cake shop, The Hudson Cakery, Bunce is always on her wedding cake A-game, so much so that she’s been featured in the likes of NJ Brides Magazine, The Knot Magazine, and the New York Times. Decorated with remarkable artistry, Bunce’s custom cakes are showstoppers, but they’re also tummy pleasers. The Hudson Cakery is one of few commercial bakeries that make their cakes from scratch. And while they specialize in modern cake designs, they can whip up just about any client’s cake conceptualizations. Below, Jennifer Bunce gives us three insider tips on how to select the ideal cake for your special day.

1. Taste Matters: "When choosing a wedding cake bakery, please do your homework and taste the cakes your potential bakery offers. It's one of the best parts of wedding planning!”

2. Be the portfolio police: "Look for a solid cake portfolio from the bakery. Has your baker created styles of cakes you like? Or are they a little too traditional?”

3. Don't budge your budget: "It's wise to know your budget -- a shabby chic buttercream cake will be less expensive than the 5-tier fondant iced cake with tons of sugar flowers. Knowing your cake design is half the battle!”

Wedding Cake Trend Alert: "Gold, gold, GOLD! Shabby chic rustic buttercream cakes with fresh florals, monograms, and textures are in for this season.”
