In the Bay of Biscay on the northern coast of Spain lies the glittering Basque cityof San Sebastian. Modeled after the city’s classic tavernas and named after the tourist mecca, Donostia opened in fall 2013, bringing a slice of Basque country to New York’s East Village. The bar, located at the northeast corner of Tompkins Square Park, specializes in authentic pintxos, the Basque version of tapas, with an emphasis on imported Spanish seafood conservas. Owners Jorge de Yarza and Marissa Miller demonstrate a dedication to the pintxos tradition, with a curated menu spanning 17 categories that offers classic and original expressions of Basque cuisine. With more than 70 items on the menu, guests can enjoy a collection of cured, dried, pickled, and preserved ingredients prepared in a variety of ways and served in a small plate format. Among the delicious dishes offered at Donostia’s is the Tortilla de Doble Capa. This plate features two layers of Tortilla Española (organic eggs, thinly sliced fried potato, and caramelized onion) stuffed with an array of decadent options: Sautéed Spinach, Leek and Mascarpone, Jamón y Queso - 18 month Jamón Serrano with Peñacoba cheese, and Meat Lovers - Jamón y Queso stuffing with Morcilla and Chorizo throughout the two Tortilla Española layers. No matter what they’re stuffed with, the result is an over the top spin on the classic Spanish tortilla.
Donostia’s complex, yet refreshing cocktail called, The Mauser, is made with clean flavors of citrus and ginger to cleanse the palate between bites of the unctuous Tortilla de Doble Capa. The Mauser cocktail is made in the traditional Tiki style and celebrates three prized sherries that give the drink distinct layers of taste – Tio Pepe, Vino AB Amontillado by González Byass and Moscatel Especial by César Florido. Mixed with grenadine, lime, vanilla, and Angostura bitters, this drink is the perfect match to the Tortilla de Doble Capa.
