This week’s “Plate to Date” comes from a restaurant brand suffused with authentic Mexican culture and, of course, cuisine. Starting in 2005 serving tacos out of a Volkswagen bus on the Yucatan beaches, Tacombi has made its way to the big city with overwhelming success. After bringing its truck to NYC in 2008/2009, Tacombi opened its flagship Fonda Nolita location in 2010. The sustainable local, organic, and additive-free ingredients in Tacombi’s dishes quickly stole the hearts - and stomachs - of New Yorkers.
Tacombi has since expanded to more locations, including La Brisa in a small beach community in Montauk, NY and Café Presidente in the Flatiron District. For their “Plate to Date”, Urban Agenda returns to Tacombi’s New York birthplace, Fonda Nolita, home of the Pork Barbocoa Dish. This savory Mexican entrée features pork marinated in chile, orange, and achiote, wrapped in a banana leaf and slow cooked overnight by steaming and roasting. The pork is paired with Tacombi’s sweet and spicy tejano salsa that is made with dry chiles and tomatillos, and served with a side of chiles torreados.
